METHODS OF PRODUCING HYDROXYTYROSOL

Abstract: provided herein is a method of producing hydroxytyrosol. the method includes: culturing a recombinant host microorganism in a medium, wherein: the host microorganism has been transformed with: a first polynucleotide sequence encoding a decarboxylase enzyme capable of decarboxylating 4 hydroxyphenylpyruvaic acid (hpp) to produce 4 hydroxyphenylacetaldehyde, and a second polynucleotide sequence encoding a hydroxylase enzyme, wherein the hydroxylase has an amino acid sequence having at least 90% identity to the amino acid sequence as set forth in seq id no: 2, and the medium comprises glucose; and collecting product hydroxytyrosol from one or both of the host microorganism and the culture medium.
