Abstract: a method of controlling aerosol production in an aerosol-generating system is provided, the system including an aerosol-generating article including an aerosol-forming substrate, the substrate being non-tobacco, a total aerosol-former content of the substrate being at least 30% by weight, and a water content of the substrate being between 5% and 35% by weight, an aerosol-generating device including a heating chamber to receive the article, a heating system associated with a heating element that to heat the substrate, and a power source providing power to the heating system; and the method including controlling power during heating of the substrate to form an aerosol for inhalation by a user and having a first heating mode, a second heating mode, and a third heating mode. an aerosol-generating system is also provided.
